The incredible — and delicious and versatile — Easter egg

easter eggsIt’s almost Easter! I love Easter, partly because it means that spring is on its way. I also love the food that comes with Easter — chocolate bunnies, angel food cake, and, of course, lots and lots of Easter ham. I love leftover ham because of the many delicious ways to eat it — on a sandwich, with scrambled eggs, with potatoes. Yum!

But what about that other food you’re practically guaranteed to have left over? I’m talking about hard-boiled eggs, of course. I love them plain, with a little salt. (And yes, I eat the yolk. Yummy!) I’ll slice them up and eat them on toast for breakfast for a few days, maybe with some cheese melted on top. And there’s always egg salad sandwiches for lunch.

This story gives us a few ideas for making our hard-boiled eggs even more delicious, after giving us a lesson on how to cook them. (I use this device — it works like a charm.) The ideas are enough to make your mouth water: An egg salad with radishes, scallions and dill; meat and egg pie; eggs baked in white sauce with cheese; eggs simmered in curry sauce; eggs deep-fried in a crust of sausage and crumbs.

It’s enough to make me rush out and buy a deep fryer.
